Life in the Countryside

Two of my favorite things include travel and of course, food, both which never fail in Colombia. Travel to Colombia has been an adventure. From Bogota to Tibacuy, an excursion. After 4 bus rides, and a 20 minute trek by foot, luckily with some of our load strapped to a horse, arrival came as bliss. Once grounded and settled, I've been making my way and meeting a handful of wonderful campesinos. All of whom are interested in where I come from, specifically noting how I am different because of the color of my eyes. The second common topic that comes about is whether or not I have found a Colombian novio, which for most seems to be the most urgent thing I should be accomplishing. The third topic always comes after asking about my time here in Colombia. Many know that Colombia brings a certain stereotype, and with this, with me, they want to convince me otherwise. However, I am not the one who needs convincing. Everyday I see the beauty that belongs to Colombia, its vibrant culture, the pride its people have, and the kindness they carry with them.
Also, everyday I am lucky enough to sit on the porch, looking out to the Paramo Sumapaz with a plate full of either potatoes or rice, or both. That would be my main diet here in the countryside. Potatoes in soup, rice with eggs, and repeat. Of course I can´t forget to mention tinto, pure coffee grown right here in the finca, cultivated from the backyard, and brought in to grind. All of which brings me to a full stomach and a good night sleep.
I've come across many delicious meals here in Colombia, many of which include these main staples, and many of which have been prepared by Martha Castillo, who, as I write of her delicious cooking, hands me a warm cup of freshly brewed coffee. Talk about the life. However, fried plantains and homemade arepas are two of my favorite things from Colombia I will carry with me in my recipe book for the rest of my life.
